I never had an issue with hiding Google meet in Gmail. I don't use it at all but I think you able to log out or block in permanently or temporarily.

I myself have not used it that often, I hear that you can press and hold on the Gmail app icon, click disable, and install Spark from the play store.  On that note that Ads in an email app are absolutely unacceptable especially when the feature set lags behind most third party apps.

I never experienced more of the Gmail ads, what I do see much are spam messages, which I never created room for.
