Favorite Mexican Dishes?

BBQ quesedillas, enchiladas, burritos and tacos for me personally. I also love their breakfast version at a local Mexican brunch chain. I haven't been for a few months as the restaurants, bars and coffee shops are still closed till further notice in my area, which is a a shame, really. What's yours?

Enchiladas. I love them so much I actually have enchilada casserole as one of my favorite dishes to make.
