What TV should I get?

My only options due to price are:

  • Sony - KD43X8000H - 43" X8000H 4K Ultra HD HDR Smart Android TV
     
  • TU8000 Crystal UHD 4K Smart TV (2020)

Well I'm not familiar with Crystal UHD and haven't looked it up though if the quality is that good for you then I say go for it. Android TVs are great though which is something I recently bought. I was in need for a 4K TV and was using 720p for over 10 years. Got one last Christmas for around $375 on Black Friday.

Something I'd say about Android TVs is you can play APKs on them, I just don't suggest rooting it. Sony Android would be better unless Crystals quality is worth it.

I know this one isn't 120 fps. I'd like to get a TV that has hdmi 2.1
What makes you say Sony over Crystals (which is Samsung)?

The 55" Q80T QLED Smart 4K TV (2020), which is the lowest size costs $2.3k AUD and that has what I want but that's way too expensive for me.

You could just get the 4K amazon fire TV. You can emulate on it (though I don't do it) and all kinds of things. It runs on Android Fire OS and is a lot cheaper. That's the one I got for around $375 on black friday. I think it would be a bit over $650 for you. It's 4K and the quality is great. I got the Toshiba version which does not have an SD card slot but does have a USB slot. Others have both. I suggest getting a USB stick with maybe 32 gb of storage at least. It comes with 8 GB.

I am just seeing this now.
I went with a Sony Bravia 43" Smart Android TV. I will probably just use the PS5/XSeX for streaming.

I'm never a fan of Sony products when it comes to television but only in favor of their Playstation consoles. I'm a fan of Samsung products when it comes to television.
