One of my recent favorite is Vegan, Gluten Free Mac & Cheese. Made with sweet potato & pumpkin as the 'sauce' & white rice for the pasta. I tried 2 different brands. The first discontinued & now the second one is on backorder. I can't find a recipe otherwise we'd try to make it ourselves.
